For over four decades, the Mairena family has proudly owned Finca San Antonio, a cherished estate that holds the distinction of being a private wildlife reserve and an integral component of the Central American Biological Corridor. This extraordinary property is meticulously managed using sustainable agroforestry practices, seamlessly blending the cultivation of coffee with the preservation of the natural habitat, characterized by flourishing forests abundant in diverse flora and fauna.
Driven by their passion for innovation, the owners have embarked on an adventurous journey, experimenting with a multitude of coffee varietals and processing methods. This particular batch has undergone a natural processing technique known as Carbonic Maceration. During this process, the cherries are meticulously washed and placed in hermetically sealed tanks, where they remain for several weeks, allowing for intracellular fermentation to take place. This triggers the activation of anaerobic metabolism within the cherry pulp cells, resulting in a distinctive flavor profile and aromatic qualities.
